What Is Mbuzi Choma? Kenya’s Most Beloved Dish
Mbuzi Choma, literally roasted goat in Swahili, is one of the cornerstones of Kenyan cuisine, rooted in the pastoral traditions of communities such as the Maasai, Kamba, Kikuyu and Kalenjin. The goat is slaughtered fresh, lightly seasoned and slow roasted over hardwood charcoal for three to four hours, producing a deeply caramelised, smoky, juicy result served with ugali, kachumbari, mutura, sukuma wiki and pilau.
