Hauchi Kay Kitchen Allergen Protocols

Six non-negotiable protocols applied at every Hauchi Kay event, across all kitchens and service operations.

All surfaces, equipment, and utensils used for allergen-containing food preparation are thoroughly cleaned and sanitised before use for allergen-free preparation. Colour-coded equipment is used at all times.

Allergen-free items are prepared first in the daily production schedule, before any allergen-containing items are handled or cooked in the same kitchen environment.

All Hauchi Kay chefs and food handlers receive mandatory allergen awareness training upon onboarding. Annual refresher training is conducted for all kitchen and front-of-house staff.

Every buffet dish at every Hauchi Kay event is accompanied by a clear allergen indicator card at the serving station, identifying the presence of any of the 14 major allergens by name.

Detailed allergen information for all menu items is available in writing upon request by any guest at any event. Guests are encouraged to ask our service team directly.

Hauchi Kay holds current food handler certifications and operates under KEBS and Kenya public health food safety guidelines. No shortcuts are taken in compliance, ever.
